3/4 cup unsweetened shredded coconut, plus extra for rolling
6 tablespoons almond flour
3 tablespoons unsweetened coconut milk
3 tablespoons coconut oil, melted
2 tablespoons pure maple syrup
1/2 teaspoon almond or vanilla extract
Raisins and dried apricots, for decoration
Cake pop sticks
1. Combine ingredients in a food processor; process until well combined and uniform, scraping the sides down often, until sticky and well combined.
2. Roll the mixture into balls and roll each ball into more shredded coconut. Thread three balls onto each stick.
3. Cut raisins into small pieces for the snowman eyes, mouths and buttons; cut apricots into triangles for noses. Store in refrigerator.
